A line down Fulton Street, smashburgers served next to cold-pressed juice, and a room that stayed full until the last patty went out. It was the busiest night we've had since opening.
We've hosted guest kitchens before, but nothing quite prepared us for this one. The plan was simple enough: hand over the counter for a night, let a great burger team do what they do, and see who showed up. What actually happened was a queue out the door before we'd finished setting up.
Collabs like this usually start as a conversation between people who like each other's food. That's genuinely all it was — a few messages back and forth, a walkthrough of our kitchen, and a date on the calendar. No agency, no contract, no marketing budget.
The logistics were the hard part. Our kitchen is built for patties, juice, and a hot line that runs breakfast through late afternoon. Adding a burger operation meant rethinking the flow entirely: where the griddle sits, how orders get called, who's on drinks so the smoothie queue doesn't back up behind the food queue.
Doors opened and the room filled in about fifteen minutes. What surprised us most was the mix: our regulars who come in for a Fort Green juice most mornings, standing next to people who'd travelled in specifically for the burgers and had never set foot in Bed-Stuy before.
A lot of those first-timers ordered a juice or a smoothie alongside the burger, which was exactly the hope. A collab only works if both sides get something out of it — and plenty of people walked out having discovered a café they didn't know existed on a block they'd never walked down.
We're keeping guest kitchen takeovers on a roughly monthly rhythm. Each one is a different partner, a different menu, and a single night. The next one on the books is the Jung Park pop-up — date announcing shortly.
